Bread Machine Gluten-Free Bread (No Mix)

This bread takes a pile of special ingredients - but if you are just now going gluten-free, these are great supplies to stock up on.

You can order these ingredients on Amazon, or Thrive Market if necessary.

You will feel a bit like a wild scientist mixing and measuring all of these ingredients, but it is so worth it!

I like to bake a loaf, eat some fresh and warm. Then, slice into individual pieces, wrap in plastic wrap and put in my freezer to toast for breakfast.

Cooking Time

Bread Machine - approximately 2-3 hours


Makes one 1 1/2-pound loaf


  • 1 1/3 cup non-dairy milk, coconut, almond, hemp or rice (I use coconut milk)
  • 3 tablespoons coconut oil, room temperature, cut into small pieces to blend well
  • 3 tablespoons molasses
  • 1 large egg, room temperature (vegan option; substitute flax egg; see below)
  • 3/4 teaspoon organic apple cider vinegar
  • 1 1/2 teaspoons pink Himalayan salt, or sea salt
  • 1 cup garfava (garbanzo or chickpea flour)
  • 3/4 cup tapioca flour
  • 1/2 cup sorghum flour
  • 1/2 cup plus 1 tablespoon cornstarch
  • 2 tablespoons potato starch
  • 1/2 cup plus 1 tablespoon mixed chopped nuts and seeds (walnuts, pecans, sunflower seeds, raisins, dates; mix it up for fun)
  • 2 teaspoons xanthan gum
  • 1 teaspoon plain gelatin (found in most bakery aisles in grocery store)
  • 2 1/4 teaspoons yeast, active dry, instant or bread machine
  • 2 teaspoons cinnamon - optional if making for breakfast toast.


Place all ingredients, in order listed, in the bread pan fitted with the kneading paddle. Secure the bread pan in the machine. Press menu button to select Gluten Free program. Press Start/Stop to mix, rise and bake. While the dough is mixing, scrape the sides of the bread pan with a rubber spatula to fully incorporate ingredients. When cycle is complete, remove bread pan and place on wire rack to cool completely for best slicing results.


If you are vegan, you can substitute the chicken egg for one "flax" egg. 

Recipe One "flax" egg

Combine 1 tablespoon of ground flax seed with 3 tablespoons of water. Stir well, and place in the fridge to set for 15 minutes. After 15 minutes, the result should be a sticky egg-like substitute.
