Mediterranean Style Sprouted Quinoa Salad

Everyone enjoys this delicious, fresh and satisfying quinoa salad!

This is the PERFECT salad to take with you to work, to potlucks, and to social food gatherings where "health-conscious" food choices may be scarce.

Start with - Organic truRootssprouted quinoa. You can find it at some Costco's; or hit this link to order online - or find a store near you that sells it.

Of course if you have another quinoa product you love to make salads with - that works as well. Your choice.

This sprouted rice & quinoa blend is the perfect blend of chewy sprouted goodness that goes extremely well with your favorite vegetables & salad dressing.

(For Elimination Diet - you will need to find an organic, sugar-free vinaigrette)

Ingredients

·       1 - 2 grated carrots;depending on how large they are

·       3/4 cup chopped basil,cilantro, and/or parsley

·       1 small grated or chopped zucchini

·       1/4 cup diced purple onion (green onion works well here too)

·       1/2 - 3/4 cup diced yellow or red bell pepper

·       1 cup sliced black olives

·       1 small diced tomato

·       1 cup chopped fresh spinach - or kale - your preference

·       1 can drained & rinsed red kidney beans (black beans are also delicious)


MICHELE'S BALSAMIC SALAD DRESSING:

·       2 tsp crushed garlic (more or less according to your taste)

·       2 tablespoons MCT Oil (you can use all organic olive oil if this is all you have)

·       1 tablespoon extra virgin organic olive oil

·       3 tablespoons balsamic vinegar

·       2 tablespoons rice vinegar

·       1 tablespoon mirin (Japanese wine vinegar; easy to find at grocery stores- adds a lot of flavor to this dressing)

·       1 tsp pink Himalayan salt (or type of salt & amount of your choice)

·       2 tablespoons honey organic agave (if you must be sugar free - use your favorite sweetener to taste)

·       fresh ground pepper to taste

(For Elimination Diet - you will need to find an organic, sugar-free vinaigrette)

Directions

1.    Cook quinoa blend according to package directions. Be careful not to overcook, salad is best when quinoa rice blend is chewy.

2.    Chop vegetables while quinoa cooks.

3.    Mix quinoa blend,vegetables and beans together.

4.    Top with your favorite dressing & mix well to coat all ingredients.

5.    Refrigerate until serving. 

Notes

Salad stays good in the refrigerate for 3 to 4 days. Enjoy!
