Gluten Free Pumpkin Pancakes

Use a large non-stick skillet and cover with a well fitting lid to cook through.

Keep your heat at medium-high, but not too high.

Monitor your heat and check often as pumpkin pancake batter is thick and takes a little longer to cook than regular pancakes. If you are not careful, they can get too brown on the outside, while leaving the inside gooey and undercooked.

Ingredients

Dry:

  • 1 ½ Cups Pamela’s Gluten-Free* Pancake Mix (or pancake mix of choice)
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp allspice
  • Dash powder cloves

Wet:

  • 2/3 cup water
  • 1/3 cup non-dairy milk substitute; coconut milk, almond milk, hemp or rice milk
  • 2 eggs
  • 1 Tbsp. organic oil
  • 1 tsp vanilla
  • ½ cup smashed pumpkin (we use organic canned pumpkin)

Directions

  1. In medium mixing bowl mix together all dry ingredients and blend well.
  2. In separate bowl, mix all wet ingredients together until completely blended.
  3. Add wet ingredients to the dry and mix thoroughly.
  4. Heat non-stick skillet hot enough that a tiny sprinkle of water sizzles and evaporates quickly. Medium-high is best, be careful not to burn pancakes.
  5. Ladle pancakes out in medium-small sizes; you do not want to make them large because pumpkin pancakes are thick and take a little longer to cook through than regular pancakes.
  6. Cover pan and cook pancakes until outer sides begin to rise slightly, check in about 60 seconds. If batter is still very wet and not beginning to cook on edges, cover again and cook an additional 60 seconds or until edges rise slightly.
  7. Turn pancakes over, cover and continue cooking until cooked through. I test them by gently touching the top to see if they ‘giggle’ too much. Pancakes are cooked when they do not ‘giggle’ but remain relatively in place; approximately 1 – 2 minutes per side.

* If you are not concerned these days with gluten - use your own favorite mix and follow the above recipe and tweak it until you get the consistency you enjoy.

We use Pamela's Gluten-Free* Pancake Mix, which lends itself to the above recipe beautifully. These pancakes are delightful and delicious. If you have another favorite gluten-free pancake mix substitute it for Pamela's.
