Italian Vegan Mac N' Cheese

Follow directions for my basic Vegan Mac N’ Cheese. Then, follow directions below and add the two together for a fantastic plate of delicious creamy Italian pasta!

Ingredients

Vegan Italian Mac N'Cheese

  • Begin by creating the basic Vegan Mac N' Cheese recipe and adding the following Ingredients
  • 1 small onion, diced
  • 1 small zucchini, or one cup broccoli florets, and / or spinach chopped; use the vegetables of your choice. Fresh tomatoes are a fun addition
  • 1 cup mushrooms,sliced
  • ½ bell pepper, seeded & chopped
  • 1 Tbsp. minced garlic
  • 1 cup vegetable broth
  • ¼ cup fresh chopped parsley
  • 1 Tbsp. dry basil, or¼ cup fresh
  • 2 tsp dry oregano, or2 Tbsp. fresh
  • 1 tsp rosemary
  • 1 tsp salt
  • Crushed black pepper to taste - optional
  • Top with a hand-full of fresh basil 

Directions

  1. Make basic Vegan Mac N’ Cheese.
  2. Sauté onion and garlic until translucent
  3. Add remaining ingredients and cook until vegetables are tender and ready to eat.
  4. Add the Italian vegetable medley to the Mac N’ Cheese, taste & and adjust herbs & seasons to your preference, heat through and serve.
