Vegan Potluck Pasta Salad

Prepare one batch of Basic Vegan Mac N’Cheese using gluten-free elbow macaroni or small shell pasta. Chop up your favorite pasta salad vegetables and add 1 – 2 Tbsp. of your favorite oil-free salad dressing; add it all together, chill and enjoy. Below are the vegetables we like to use in pasta salad.

Ingredients

  • ½ cup sliced black olives
  • ½ cup sliced pimento stuffed green olives
  • 2 green onions diced
  • ½ chopped bell pepper
  • 1 cup chopped broccoli florets
  • 2 Tbsp. sweet pickle relish
  • 1 tsp onion powder
  • 1 Tbsp. tarragon
  • 1 Tbsp. rice wine vinegar
  • 1 Tbsp. raw honey
  • 1 tsp salt
  • Crushed black pepper to taste; optional

If gluten-free is not a problem for your family, use the regular pasta of your choice.
